nightclub cost questions-HELP!

Currently, I am doing a school project on a business concept: the launching of a super danceclub in Vancouver, BC. I have a few questions regarding this project.

For a club like the Sonar

1) What is the variable cost for alcohol? What is average variable cost for running a typical saturday night?
2) What is the average variable cost to serve food and beverages?

Also,

3) What is the average industry(in Canada or BC) sales and profit?
4) How much does it cost to obtain a killer sound system like the one at Gatecrasher or Twilo in Canadian dolllars?

I tried all the statistic sites but encountered no information whatsoever; so even some estimate figures would more than help me out. Thank you in advance.
