Don't ever put your element on full. Pretty much #1 way to avoid burning shit. You don't really need it at that level unless you're boiling water.

My ex destroyed so many of her pans just because she thought that putting it on high until it was hot and then turning it down was an effective modus operandi. It also made sure that just about anything she cooked got burnt.

I heat on med, and if it's not hot enough then I turn it up. But I never start on full. Heating pans is easy, getting them to cool isn't.

I put the ingrediants in first, then start heating on medium.

waiting, then throwing it in cause sticky pan goodness and it burns the shit out of the food.

Depends though. If I'm cooking meat softer veggies go in later. I also don't put eggs on the pan until it's had a chance to warm up.

I now have a gas element range and I'm slowly learning how to cook with that. Even putting it on medium is a bit too hot. I need to learn to set that thing by sight.
