i just graduated from Pacific Institute of Culinary Arts, about 2 weeks ago.
in my personal opinion, i think dubrulle is a good choice, depending on the type of food you are interested in cooking. if you already have culinary experience, i would suggest looking into dubrulle and researching the chefs and the type of cuisine they specialize in... if it sparks your interest, then definately goto dubrulle. i think otherwise, Pacific is a really decent choice if you have no experience and are very serious about cooking. they teach you the foundations of cooking, almost exactly in the same format as many schools in France do. and let me tell you, if you have no experience, the instructors there will whip your ass in shape in no time. but again, if you are unsure of whether cooking is a good career choice for you and you want to try out a cooking school, then go for dubrulle. |

i already went to this hour long 1 on 1 info session and the guy showed me around the school and it looks pretty good...some of the stuff they do is amazing and i want to learn it... congrats on graduating!! wut are u going to do now? ~Dalyn |

im not sure yet, i've got a few interviews set up at some places downtown. but i think im gonna stick around here and work for 6 months, then im moving to tokyo to work in november. that's the one thing i will say about being a cook though, you can travel almost anywhere in the world and have no problem finding a job. there are always people who are too lazy to make food for themselves, so the demand for restuaraunts and chefs is alwasys there. the same goes for vancouver, there is definately no shortage of work (especially with the olympics coming up). |

ok, pacific sucks as a culinary arts school. the owner is really harsh on his students and alot of people just drop out because they cant take it. it's known around the country, if your a professional chef, NOT to ever work for the owner of pacific. the owner can't get any canadian chefs to teach for him because he's such a brat, so he goes over to europe to recuit teachers. seriously, i cant stress the fact that pacific is not the right choice.
dubrelle is nice if you want to be a local chef for one of the hotels or a big restraunt in vancouver. i just finished the pastry course there taught by chef paul and it was an awesome time, and i learned so much! if you're wanting to go international with your skills the place to train is either paris, or the culinary arts institute of america in upstate new york. new yorks where i'm planning to go once i've graduated and got my 4year university degree. i'd definately give a thumbs up for dubrelle, it's obviously the best choice for cooking schools in b.c. |
