I've multiplied it by 1.5x so it'll fit in a regular loaf pan (about 5" deep). Ingredients = 3 cups flour (organic whole wheat preferably if you're cool like that) 1.5 tsp baking soda 0.25 tsp salt 0.75 cup butter 1.125 cup brown sugar (or raw sugar if you want) 3 eggs, beaten and mugged 3.5 cups of overripe bananas - if you want to make em really mushy throw them in the freezer and when they thaw they are perfect. - preheat to 350°F, and grease that pan up... i forgot to do this once with disastrous results - in one bowl, combine flour, baking soda and salt.. you might want to sift the flour, but with whole wheat flour this can take for ever - in a separate bowl, cream together the butter and the sugar... this is the shitty part, but you MUST make sure they are mixed together very well. It will be very thick and hard to stir, but should be a uniform consistency, i.e. no little butter chunks. - stir in eggs and mashed bananas to the butter/sugar mix until well blended. Stir this new mix into flour mix until just moist, don't want to overmix it. Pour this into the pan and throw it in the oven. It says in the reciped to cook for 60-65 minutes, but this was never long enough for me.. usually about 80-90 minutes was better. Just do the toothpick thing. Let it cool in the pan for 10 minutes when it comes out, then flip it onto a wire rack to finish cooling. I'm sure if you wanted to experiment a little bit and throw some nuts or something in, that would work out fine too.... enjoy. |
