well what are you doing?

set your oven to 400 degrees and cook for 20 mins, checking often to make sure the middle is white

or if your using a pan, put some oil in the bottom of the pan, cook on medium heat rotating often untill cooked evenly throughout

Hmmm well I guess I'm cooking it properly, I defrosted it in the microwave, put oil on the bottom of the frying pan. Placed the chicken and am cooking it on meddium temperature and rotating it every 5 mins. I also added sat and pepper for flavour. How long does it have to cook for? This is my first time cooking chicken.

hmm...the best way to check is to cut it and look at the center...if its white your good to go! I usually do mine in the oven, in a pan with some chicken broth, so if you do cook it longer due to being paraniod of getting sick (like me!!), it wont dry out at all..so cook it in the oven in a pan, with some chicken broth for about 25-30mins at about 400.

A couple of things to help avoid dry meat:

1) MARINADE. Some tasty liquid that you let it sit in for about 24 hours.
2) SIMMER. Again, some tasty liquid that you let it sit in once it's done frying up for about 5 minutes.
3) SAUCE. Once you've done letting it simmer, pour out the liquid into a measuring cup, add a little bit of cornstarch, seasoning and sweetener of some variety (I highly recommend honey) and put the liquids back in... bam, you've got yourself a sauce!

My favourite is teryaki. Dice up your chicken, fry it with minced garlic, let it simmer in 1/3 cup soy sauce and 1/3 cup wine/sherry. Strain out the liquids, add 2 tbsp honey and 1 tbsp cornstarch as well as grate in some ginger root (not too much or it'll be hella spicy, unless you like that), put the sauce back in and stir until thickened.

Ya'll should try chicken with like sauce made from tomato paste. Its a sauce thats kinda like spaghetti but a little sweeter with basil and alot of spices.

you let the chicken cook in the sauce for liek 4 hours than take it out and you can eat it on rice or linguini or any real pasta noodle works.

but it tastes even better if you let it sit for a day or two in the refrigerator the sauce gets thicker and just tastes better JUST LIKE CURRY haha.

As far as chicken goes I just buy the plain chicken breasts from M&M Meats and do em on the BBQ with some Frank's Red Hot. Easy. Good.

are a few good websites to get you started.
To avoid dry chicken, go buy a meat thermometer. Sear the chicken in a hot pan, place in oven at 350f. when the chicken reaches an internal temperature of 155, remove and let rest in warm place for 5 minutes. then the chicken will be cooked, still juicy and hot. 160 is the internal temp. for cooked chicken, well done red meat and pork.
hope that helps :)
