Alas ten years in the game at fine dining managment, chewed me up and spit me out! I was going to hop at bin941, as a daytime sous, but i got bad memories, partying at that spot. The chef and other staff, knew who i was, but i had no idea who they were, and what we did together! It would have been awesome, though, theres some bad ass talent in that place, but i had to worry about staying clean and sober.

Someday perhaps, but never at the level i was once at. Perhaps something a lot more chill.

Tapenade bistro eh? Ill have to check it out. You guys pull in ingredients from the markets ever? Seafood? I always like stevston as a good place to find some out of the way good eats! :)

yeah, we do classic french/provencal stuff mainly. nothing too progressive, just classics made solid. it's a good spot though, casual fine dining away from the choas of downtown.

im looking for something different though, i need to challenge myself alot more at this point.

but yeah to answer your question, no. nobody orders off the docks really in steveston. theres no point, when you can just get it from albion or someone for the same price per pound, at reletively the same freshness.

Lumiere is already full and most friday and saturdays for restaurants are filled but there still is weekend openings at some of the classy joints. The one on this years list that really surprised me was the White Spot Carderos?? If you live in vancouver and haven't been to a White Spot then your not a true British Columbian.

bacchus is a classic, parkside really hasn't impressed me and MACRONI GRILL (Overpriced Earls). If you want something new fresh and hip try Chambar although i think they are booked solid. CRU is another hit as well as NU.

from a guests perspective : WOOHOO!! Do eeet!! and Do eeet often! CinCins might not be as hot as its been in the past, now that Chef Prasads got his own gig, but if La Gavroche is participating GET UP ON IN IT!! And for fucks sake, the food is affordable so splurge a bit and try out some new wines - VINO VINO!!!

ps: axion - where you working these days? Dont pull out all your hair!! hahaha! :)
Here is a piece of advice from an ex-concierge. Even though we gets meals free in exchange for sending business to the restaurants it is the owners who provide this service to us not its staff. Same goes for this event. This is the owner way of marketing. Typically January is one of the slowest months of the year for Restaurants. This event is a great way for them to drum up new business without sacrifing their busy times. As for the staff they still derserve, as long as the service is excellent, a proper gratuity. My point is when tipping at these events there is an unwritten rule in the service industry that one should tip accordingly as if the meal was at full price. Even though when I would eat and the meal would be free or greatly reduced I would still tip as if the meal was at full price. I believe people should at this event as well.
With ordering just water...unless you have a severe allergey to alcohol or are the one Designated Driver at the table, purchase some wine with your meal. At least a glass. Plus a meal paired with the right wine can make the evening that much more of an experience.

My favorite dish at Chambar was the osterich but they pulled it off the menu last month due to distributor problems. the is only two things there to stay away from and that is the blue cheese poutine or the blue cheese martini. Everything else is amazing
