There's a few tricks you can use - finding an accapella of the song, reversing the phase and playing them at the same time can cancel out the vocal in some cases. There also used to be a trick in the 80's where most pop music was mixed in stereo, with only the vocals mixed completely into the center, so subtracting one stereo channel from the other left you with (mostly) only the music... they used to sell a "vocal remover" box at Radio Shack that would do this. These days most vocals are heavily processed in stereo, so this wouldn't work anymore.
Probably you're stuck with the old karaoke trick: hire a band and re-record the song without a singer.
