The Vancouver Island parties with one stage have been some of the best in the world from my experiences. Different styles all on one stage is great. Having lots of stages can be annoying, in that everyone just wanders between them aimlessly, never staying in one place to see where a dj is going with their set.
I'd take one stage stacked with great talent over 2 or 3 everytime. It's all personal preference but bigger isn't better by anymeans, stay in one room, get to know some cool people, share all kinds of music.......those are what make a party great.
