I have no idea bout the science behind it but you can do this with any beer as far as I know. When I got to the liquor store and come home with warm beer I always throw a few in the freezer to cool 'em off. If you keep it in there for an hour or so and pull them out you can clearly see that it's still liquid. Crack the cap and start to drink and it'll quickly freeze up.... try it at home kids!

It must have something to do with the air exposure or release of gas from the bottle... someone around here might know.

You got it - it won't freeze as easily when pressurized - but the escaping CO2 when you open the cap gives some surface area for ice crystals to form (on the bubbles)
