hey i understand what ur saying. one of my best friend is jap and his dad was the head chef for four season or one of those hotels in japan. then they moved here and started their own resturant. its just that alot of threads that i see about jap food, not just in this site, theres always someone that bitches that everyone has never tried "real" jap food and yada yada. its just annoying. somtimes people just want to pig out at all u can eat without paying an arm and leg, like me lol.

I haven't been to Kitto but the other 4 are good and Shiro is my personal fav.

I go to kitto on granville quite a bit, the service is always good and the wild sockeye is always very good. It's right by work too so it makes it easy to grab a quick fix if I call ahead.

To me its not about the all you can eat factor. Its for the japanese restaurants that aren't even run by japanese people.

Its like a French person opening a Korean BBQ Restaurant.

Thing is most people can't tell the difference between actual sushi and the other sushi

hmmm, so you have to be japanese to serve good japanese food??? just a question really. you don't think there could be a case where someone, lets say even a canadian white person, can study japanese cuisine and make some killer japanese food??? i think its quite possible. i have a friend that studied chinese cuisine for years......some of the best chinese food i've ever eaten! just curious thats all.

Their chef is japanese, and all the main cooks are japanese...

And by Chef i mean chef, that guy was some bigshot chef in japan, won some awards then moved down here... *I talked to one of the cooks one day when I was complementing them on my chopped scallop nigiri*

P.S.
Chopped Scallop Nigiri is something everyone should try. Its the only thing that I always get when I visit a sushi place. One thing I can't go without, when visiting a sushi place.

oh for sure, you can not be Japanese and go to japan to learn the techniques and become a good japanese chef. Just as there's probably a couple japanese-run and operated restaurants where the chefs aren't really trained either.

How you prepare the sushi is only one of the major factors.
The other major factor is where the restaurant gets their
fish from. Some places have amazing sushi cooks but they
try to save their money on the fish to make more money,
and that's where the food quality drops dramatically.
Also, the amount of fish they order at once... The longer
the fish sits, even in the freezer, affects its quality and
taste.

ah i figured. it was actually a question 'cause i don't really know what happens behind the scenes at most places i eat. i think this thread should be called............whats your favourite sushi place?? that way no ones claiming they know the best japanese food, they just know their favourite :)

but to add to the post above.

These people that are opening places like sushi express, nagano, sushi box, jun sushi etc.

They aren't restaurants where the cook actually went to japan learned the actually authentic cooking of the Japanese.

These are people who just learned a few tricks from someone on how to make sushi and they open their restaurant up knowing full well most people can't tell the difference between good sushi and awful sushi.

Samurai sushi is not real sushi. Its big portion sushi yes, but its not real sushi.

The Samurai Sushi i went to before was no Japanese at all, and trust me I could tell considering I can speak it fluently and can tell just by looks for the most part if they are Japanese, Korean or Chinese/
