christmas rum cake
- 1 or 2 Bottles of Bacardi Superior Rum
- 1 Cup of Butter - 1 tsp. Sugar - 2 Eggs, large - 1 Cup Dried Fruit - 2 tsps Baking Powder - 1/2 Cup Chopped Nuts - 1 Cup Brown Sugar - Before starting, sample Rum to see if it's SMOOTH. Proceed. - Select large mixing bowl, measuring cups, etc. - Check rum again, it must be just right. make sure it's real Bacardi quality. Pour one level cup into glass and test it. Repeat again if necessary. - With electric mixter, beat one cup of butter in a large fluffy bowl. Add one theaspoon of thugar and beat it. - Meanwihle, make sure RUm is schtill O'K. Try anover cup. Open 2nd bottle if neshesarry. Add 2 cups of eggs to fried druit and heat until high. If druit gets schtuck in beaters, pry loosh wiff a shoedriver. Sample Rum again techking for tonscisticity. - Next, shift 2 cups of pepper or salt. It really doesn't matter whish. - Sift 1/2 pint of lemon juice. Fold in chopped butter and shtrained nuts. - Add 1 tableshpoon of brown thugar or whatever color you wisshhh. - Grease over. Turn cakepan to 350 degrees. Pour mesh in over and hake. - Check Rum again and go to bed. (Can be made anytime through the year) |
