Yeah there's a ton of trance out there like that, but there's also a huge amount that's not as well. Tech Trance is becoming more and more popular and it contains none of the elements that you describe disliking that much. Check out some new Marco V tunes, and that Mr. Sam - Forever Waiting (Dmitri Andreas mix) as recent examples that have been through Boomtown in the past couple of weeks.
Sometimes I find that obvious buildups are a good thing. Based on personal experience as a trance DJ, I find a lot of trance tunes with tricky buildups tend to annoy people more than get them excited; maybe that says something about most people who listen to trance, hehe. Personally I'm really feeling the darker tech stuff these days with lethal percussions and basslines, and tunes that don't follow the typical trance formula of kick -> bass -> hook -> breakdown -> buildup -> repeat -> outro. Cheesy melody lines ala DJ Sammy never have and never will impress me.
