IT'S _NOT_ A "FAST-FOOD NATION", AFTER ALL!!!!!

It's truly heartening that people out there get into and have fun with cooking, and are actually _sharing_ ideas!!!

A group of friends had a cook-off a couple of months ago. The theme: chicken.

Yes, other people brought side dishes, but, we had a buffet of at least 5 different chicken dishes. It was a brilliant time w/ fantastic people and great food.
POTLUCKS RULE!!!!

Kelster: I don't think you'd have a chance of holding a cook-off @ Tribeca, since it _is_ a restaurant, and all...
At a friend's b-day, there, I was introduced to the chef, who claimed to make the best Jerk Chicken in Van.
Now, it's a given that I make the best Jerk in town (shaddap, ya ignorants!).
We were talking about having a Jerk Off @ Spanish Banks, one summer.
Two chefs. Two Jerk pits. One sound system. Dozens of party-people!
Never happened. Pity.
It's a bitch trying to organize these things.

Cooking is, indeed, an art.
Like painting, sometimes less is more.

cookin

well im only 17 and ive been cookin for about 7 years or so and i can cook most anything also i have a full scolership to frace to attend a cullinary school there in the fall and i currently run a 120+ patio resturant cooking isnt hard its a way of life

friing up a speak and cookin sum potatoes isnt that hard
just fri the meat on a pan till its done, cut it occasionaly to see where its at, spread some bbq sause on em, and sprikle streak spice on em too.
boil sum of those small bit size potoates for a while, grab the butter and bacon bits............and a few slices of bread, and your good to go!!

shit cooking is easy son. All you need to do is start with some sort of base recipie, then get creative. Easiest shiz to make - pasta and pasta sauces. Steaks are easy... curry chicken is easy (and i can make it).

#1 thing you need - spices, lots of em.
#2, meat.. always need meat..

Awww why thank you :)

I think alot of the struggle about being 21 is were usualy stuck only cooking for our selfs. Therefore we look for simple easy things that dont involve alot of cleaning lol.
I should of mentioned this before, but I have a cheet :P Example Ill start off with somthing like a can of soup, frozen fish, mixed frozen vegies, or a pre wash bag of lettuce. Its kind of like a motivator since you have already skiped alot of hassle. However I still want to eat somthing healthy/fresh and actuly cook it too. So thats when I get creative and add in other easy things like choping up an onion/tomato or pick out a flank of steak.

i am an amazing cook, not just with recipies, but i get creative as well.

Im a few years short of 21...I couldnt cook before, but because i live on my own i decided it was necessary to learn how...noodle bowls get really boring after a while.

Axion, panty moving creme brulea eh? you should post this info for all to know. It sounds pretty incredible to me

I want to learn how to bake and make desserts too. That will come with time, i'm sure.

DAMNIT! No one has anymore wine or vegetable tips?!

yes sir the mango creme brulee is a ladie killa to say the least BOOYAH !!
also try doing something like a stuffed strawberry very tasty also a ladie killer
1. cut top off berry bout 1/8 of a inch from the top(save the top for garnish)
2.hollow out inside (but save everything )
3.wisk hollowed remains with heavy cream (whippin cream)
4.add 2 tea spoons of suger and a half teaspoon of vanilla
5.fill empty strawberry with whipcream & strawberry gutz
6. place in freezer for about 20 minutes
7. before serving garnish with left over top of berry and warm chocolate and caramel sauce

wine tip eh well as u know for a heaver meal like steak or lamb a nice red merlot goes well and for something more like fish or cornish hen white wines always worked for me :)

and veggies ,well not that much make sure you season you veggies alot the can soak up a ton of spices and dont over cook you veggie ppl tend to leave their veggies on the stove for a LONG time dont anywhere around El Dante should work out and if they are too hard you can always Nuke them :P gotta love them microwaves only kiddin lol

as far as veggies go, there are two main things you should remember.

-after you cook your veggies, soak them in an ice bath for 30 seconds. after they go in the ice bath you can re-heat them as nessecary. soaking veggies in an ice bath serves two main purposes:
-it will help the vegetables to retain their natural color after being cooked
-it will stop the veggies from continuing to cook after being in boiling water

-if you are serving plain boiled or steamed vegetables, buy and expensive bottle of olive oil, trust me it will go a long way. before serving, toss all your veggies in a little bit of salt, pepper and the olive oil. it will enhance the flavour and the olive oil will give the veggies a nice shine.

but seriously..
in my culture its kinda of a tradition where the mother's teach the daughters howto cook at a young age..
sooo my mom teachs me things.. and now my grandma is here so she teachs me even more portuguese food..
and i also have my dishs i make..
and i was in culinary arts class in highschool.. haha i never showed up and i never did any homework.. i jus showed up, cooked and ate my food.. and i got good marks on my cooking

i <3 cooking..
even wen im bored and im not hungry.. i make food.. and i keep it in the fridge til wen im hungry.. haha.. im weird like that.

I loooooooooove portuguese food! I used to work at a veggie market owned/run by our old family friends who are portuguese. YUM! They would always feed me on my breaks and be like "Eat, eat!" Aww and 'tia' (she wasn't my auntie, but she was everyone else's, so I called her that too) was the best. Mm always made yummy cookies and stuff... Mmm...'

I can't really cook. I had to make meals for myself when I was in Aus this summer (I didn't eat out all the time) and I used to hafta cook at the grouphome I worked at for 2 years... But I get really anxious about cooking. it a high stress thing for me. I'm a freakin Jessica Simpson in the kitchen. Good thing Matt can cook!
