but if it's in the fridge, sealed tight, the cooler temperature prevents the evaporation of the cake's moisture and any evaporation that takes place is kept in the same air as the cake.

actually the cool teperature will cause the cake to dry out quicker than if left stored at room temperature. the amount of water that can be absorbed by the starch in the cake declines as the temperature falls towards zero.
the only time cake should be stored in the fridge is if it is covered with whipping cream.
keep your bread out of the fridge too!
