vodka pudding.

just mix up instant pudding mix with half the required milk and the other half a mix 2:1 of carolans irish cream (aka nectar of the gods if you know me) and van gogh double espresso vodka.

it's not quite as thick as normal pudding but who gives a fuck it tastes like heaven.

ad some whipping cream from the can and serve with a side of whippits.

Three Cheese Chicken Penne Pasta Bake

1 /2 cups multigrain penne pasta, uncooked
1 pkg (283g) fresh baby spinach leaves
1 lb. boneless skinless chicken breasts, ut into bite-sized pieces
1 tsp. dried basil leaves
1 1/2 cups pasta sauce
1 2/3 cups diced tomatoes, drained
1/4 cup light cream cheese spread
1 cup shredded part-skim mozzarella, divided
2 Tbsp. light parmesan grated cheese

Heat oven to 375 F. Cook pasta, adding spinach to boiling water for the last 1 min.
Cook and stir chicken and basil in large nonstick skillet on medium-high heat 3 mins. Add pasta sauce and tomatoes; bring to a boil. Simmer 3 mins, or until chicken is done. Stir in cream cheese.
Drain pasta mixture; return to pot. Add chicken mixture and 1é2 cup mozzarella. Spoon into 2-L baking dish.
Bake 20 min. Sprinkle with remaining cheeses. Bake for 3 more mins.

I made this last night (with a few adjustments), and omg it is soooo good. :D
The adjustments I made was I added a little more basil than called for and a wee bit more cheese. I also misread the directions and put the cheese on before baking it, but it worked really well. :)

anyone know how to make a good omelette? mine ends up more like scrambled eggs instead.

^ I do but you kind of have to be shown.

I'll try to explain...

2 or 3 eggs, beaten with about a shot-glass worth of water (not milk)

grated cheese, and some chopped veggies (this is a whatever's in the fridge thing for me, feta, olives, tomato, peppers, tomato, etc)

get the pan really hot (if you flick water drops on it and they sizzle/steam off right away it's hot enough)

pour the egg in and immediately start pulling the cooked egg from the edges towards the middle with the edge of your flipper, so it wrinkles up, and the uncooked egg runs onto the pan, do this all around the edges until you have to tilt the pan to keep a circle of egg in the bottom of the pan and it's cooked most of the way through. you should have kind of a wrinkly pile thing going on.

throw on the cheese and stuff, then get under one half and flip it over the other half so it's like a half circle. here i sprinkle some cheese on top, turn down the heat, cover it and cook for another minute or so to melt the cheese and cook all the way through.

I'm not a chef but this works for me.

I looked for pictures of the technique but couldn't find any.
