rhia, you would have to cook the spinach first, let cool, then add. most frozen veggies are frozen in such a way, that they arent losing their nutritional value. besides, fresh spinach shrinks down to nothing, you are getting more bang for your buck with frozen.

and some spinach dips are cold dips. hot ones have more cheese.

fresh spinach and cherry tomato pasta.

1 bag of pre-washed fresh spinach
1 package of cherry tomatos
2 cloves of garlic
1 cup asiago shredded
1 cup parmesan shredded
2 tbsp olive oil
salt/pepper to taste
fusili pasta

warm frying pan up, add olive oil. toss in garlic, lightly brown. add full bag of spinach (it looks like a lot, but when it cooks it shrinks to nothing). salt and pepper to taste. add tomatos and cook for a minute. add cooked pasta and both cheeses, gently toss.

this dish takes 30 minutes at most to make, it is considered bachelor chow in this house, and is healthy for you. i buy both cheeses pre-shredded from safeway's deli section to save time.

i'll give u the chinese secret.
u cook whatever the hell u want in a wok, chopped ingredients of course.
meat first, veggies last. you can even steam them before hand if u want.
dash the salt & pepper if u really need it. touch of sugar to neutralize.
msg.

everything MSG.
it'll turn all that guy from the previous page's fuckups into masterpieces.

disadvantage: the firefighters stop coming to your house even if it's really on fire.
advantage: you can have the biggest smoke fest and the firefighters will tell the cops that ur just cooking chinese food.

As Avana said in the next post..you get ALOT more spinach by using the frozen/chopped!

That recipe is a COLD spinach dip but I do have a great hot one as well!!!

Avana - that pasta sounds really good!

HOT SPINACH DIP

1 can artichoke hearts *drained*
2.5 cups of assorted shredded cheese (Parmesan/mozzarella/romano/or some kind of smokey cheese
2 cloves of garlic *minced*
1 package frozen chopped spinach *thawed/drained* (add another package to make it more spinach-y!)
1/3 cup of cream cheese
1/2 cup sour cream
1/2 cup of red peppers *diced*
1 tbsp fresh ground pepper
1 roma tomatoe *chopped*

Mix every (except tomatoe) together. If you want it less chunky and more creamy - mix everything (except spinach) in a blender or a food processor for about 40 seconds and then mix in spinach with a spoon.

Bake (350) for 20 to 30 minutes and then top with tomatoe.

Bruchetta with goat cheese

6 roma tomatoes *diced*
1/2 of a small red onion *diced*
1/2 cup of fresh chopped Basil (add more basil if desired)
2 cloves of garlic
2-3 tbsp's of balsamic vinegar
1 tbsp fresh ground pepper
1/2 cup of softened goat cheese or goat cheese feta

Mix everything together and then spread on a baguette. Toast in the oven for 10 minutes on 350.

Instead of mixing the goat cheese in, you can spread it on the bread and then top it with bruchetta mix OR if using the feta..you can sprinkle it on top. =)

Simple and tasty Icing!

3 cups of Icing sugar
2/3 cup of softened margarine/butter
2 tbsps of milk
1 tbsp of pure vanilla extract

Mix together and spread on cake!!!

(Too make this recipe even better, add 2 packages of softened cream cheese!)

Holiday Stuffing Lauren Style

2 packages of 'stove top stuffing' (and whatever is needed to make it plus 2 extra tbsp of butter/margarine
2 apples *chopped*
1/4 cup of chopped walnuts
1/2 cup of dried cranberries
1 tbsp of dried sage
1 tsp of dried thyme
1/2 cup of onion
2 cloves of minced garlic

Mix everything into a large pot and follow directions on the stuffing box. Once fineshed cooking on the stove, transfer into an oven safe dish and bake covered on 350 for 10-20 minutes. ENJOY!

(You can add cooked ground turkey or pork sausage to make it even better!)

Broccoli and Cheese soup!

2 cups of Gruyere cheese *shredded*
2 cups of aged cheddar cheese *shredded*
3 cups of chopped broccoli
1 clove of minced garlic
1/3 cup of chopped red onion
2 cups of water
1 chicken cube thing
2 tbsp fresh ground pepper

Partially steam broccoli and then drain. Add everything else (except cheese) and mix in a blender or a food processor. Transfer back into pot and add cheese. Cook on med until hot. Top with extra cheese!!

That's all for now..

I have a good chili and simple stew recipe that I'll put up later!

dinner tonight!

goat cheese stuffed salmon

8 oz fresh salmon
1 thing of herbed goat cheese
1 tbsp lite mayonnaise
1 tsp dijon mustard
1 tbsp parmesan
salt/pepper to taste

split salmon filet in half to make a pocket. stuff with herbed goat cheese(i only use 1/3 of one of the little rolls you get in deli). close pocket, season with salt and pepper. mix mayo, mustard and parm in bowl, rub onto top of salmon. bake for 15 minutes at 350 in oven, or until salmon is light and flaky.

i served it with jasmine rice and asparagus.

I've posted this before but its such a party pleaser you guys can have it again :)

Jessica's Summer Salsa

Chop up the following into little tiny cubes:
-avacado
-tomato
-papaya
-mango

I usually go with a ratio of 2:1 avacado/tomato:papaya/mango

Grate or dice a habenero pepper or two into the mix (I have tried pretty much every kind of hot pepper in this, and these are my favorite for it)

Squeeze the juice of a lime over it, add some fresh ground pepper.

Roughly chop a handful of fresh cilantro, mix it into the other ingredients.

Chill & serve.

Great on mexican food, burgers, any sort of wrap, even just with chips.

I love reading through recipes as well as cooking & baking!
Here is one of my favourites for this time off year....Ginger Spice Cake with Cranberry Sauce

ginger-spice cake

2 c ap flour
1 tsp bp
1 Tbsp grnd ginger
2 tsp grnd cinnamon
1/2 t grnd cloves
1/2 t allspice
1 egg
1/2 c molases
1 c sugar
1/2 c unsalted butter, melted
1 c buttermilk

preheat to 350F
coat 9" round cake pan with cooking spray (or butter and flour), put parchment circle in bottom of pan

sift dry
separate bowl, beat eggs, molasses, sugar and butter until thick
gradually mix in dry in 3 batches, alternate with buttermilk
beat for 1 min after each addition
mix until smooth

bake 35-40 min or until toothpick comes out clean

cranberry sauce
2 c fresh cranberries
1 c dried cran
2 c h20
2 c brown sugar packed
1 tsp allspice
1/2 tsp fresh grated nutmeg

combine sauce ing in a pot
boil over med heat
simmer 20 min, stirr occasionally

cool cake complertely, remove from pan, slice in wedges
serve with sauce and whipped cream

Cereal a la Grapes

Corn flakes
Musliex (or Granola)
Milk
Fruit (optional)

Add corn flakes to a medium to large bowl. Top with Musliex or granola.

If adding fruit, do so now... cut up banana or strawberries... add blueberries whole.

Add milk until bowl is nearly full.

Eat with spoon.

Serves 1 hungry dude.

do you add sugar to your cornflakes so you have to brush your teeth after eating breakfast cause they feel worse then when you started eating?

Sugar to cornflakes? That's crazy talk. I used to have a sitter who did that for us... gross.

Sweetness comes from the musliex/granola and/or fruit.

fresh salsa

2 tomatillos
5 vine ripened tomatos
1 small onion
1 bell pepper
raw jalapenos to taste
fresh cilantro to taste
the juice from 1 fresh lime
pinch of salt

dice everything finely and combine in a bowl refridgerate for an hour before serving.

great with some carne asada in grilled from raw tortillas!

i used to eat this with the mexican grooms. we'd take everything up to the banks of the green river in the national park and grill everything up on the outdoor bbqs and lounge in the sun drinking beero on our afternoons off.
good times!

i haven't looked for tomatillos in vancouver since i came back, are they hard to find here?

Nope, I have bought them at Safeway, Superstore, Donald's Market, Famous Foods and a few places on Fraser.

Thought that this needed an appropriate title and a bit of stick :D

Here are my entries for the day:

5 Minute Bread Pudding
Courtesy of Rachel Ray - 30 Minute Meals

1 loaf store bought frosted or unfrosted cinnamon raisin bread, unsliced
1/2 stick butter, softened
1 can sweetened condensed or reduced fat sweetened condensed milk
2 jiggers brandy
Whipped cream in spray top canister from your dairy aisle
Ground or grated nutmeg, for garnish

Heat a griddle pan over medium heat. Cut 4 thick slices of cinnamon raisin bread. Butter both sides of the bread slices with softened butter. Grill bread until brown and crispy on both sides, 2 minutes on each side.

While bread grills, in a small saucepot, heat sweetened condensed milk or reduced fat sweetened condensed milk over medium low heat for 4 minutes. Remove from heat and stir in brandy.

Cut each grilled slice of bread into quarters and pile into 4 dessert cups. Top bread with a few spoonfuls of hard sauce of sweetened condensed milk and brandy and a generous swirl of whipped cream. Garnish cream with a sprinkle of nutmeg and serve.


Breaded Parmesean Chicken

Boneless chicken breasts (4)
Flour
Eggs (2)
Bread crumbs (seasoned/unseasoned)
Parmesean cheese
Oil
3 inch deep dishes for stationing

In between two sheets of wax paper or saran wrap, pound chicken breast to 1/2 inch thick.

Dish #1: Pour in a cup of flour
Dish #2: Crack both eggs and whisk
Dish #3: Pour in bread crumbs and grate in parmesean cheese. If you have made your own bread crumbs or bought unseasoned, you can add spices at this time (i.e. salt, pepper, oregano, cayanne... anything dry). Container parmesean is also good if you don't have fresh grated.

Preheat pan on medium heat with a good amount of oil. Take chicken breast and dip generously in all three stations. Cook chicken on both sides until golden brown. Let it rest on paper towel + plate for excess oil to drip out.

Serve with fresh bococcini salad or some yellow potatoes & greens. :cheesy:
